A Fun Twist On Traditional Salad – Scrumptious Salad Rolls!

Salad rolls are a great way to add fresh veggies to your diet.  They are just as fun to make as they are to eat, so feel free to get the kids involved in rolling up their own salad rolls.  They also store well for a day or two in the fridge, so they make for a fantastic grab-and-go lunch the next day. Here’s how to make them!

First, prepare your ingredients:

  • Rice paper
  • Mint
  • Basil
  • Cucumber (spiralized or thinly sliced)
  • Carrots
  • Bell peppers
  • Green Onions and/or any other thinly sliced veggies you enjoy, such as radish.

(This is a great way to clean up miscellaneous greens veggies out of the fridge!)

Soak the rice paper in warm water for about 20 – 30 seconds. I used a large frying pan as it has tall enough edges to keep the water in.  Next, lay down your veggies and roll up!

Eat the salad rolls plain, or dip in a sesame-ginger sauce.  You can also mix soy sauce and wasabi for a quick and easy dipping sauce.
