Growing up, we ate Haystacks about once a week. I didn’t realize the rest of the world was ALSO eating haystacks, but just calling them Taco Salad! I like to think of Haystacks like taco salad on steroids – they are often loaded with added veggies like olives and cucumber. They’re a great meal to prep once and eat twice – a way to save time, which I am always in favour of!
Haystacks
Any of these ingredients are optional & certainly do not cover the entire list of what could be added to a Haystack! Great for feeding a crowd that may have various tastes or dietary restrictions.
Taco Chips
Meat – ground beef, turkey or chicken (season as desired – with taco seasoning or garlic, onions, etc)
Beans – Black beans & corn, brown beans, a mix of beans (I like to season mine with Mexican seasoning but garlic & onions & salt would be another option.)
Greens – spinach, romaine, lettuce or any other favourite greens
Fresh veggies:
Tomatoes
Bell Peppers
Cucumbers
Green onion
White onion
Mushrooms
Avocado
Preserved Veggies/fruits:
Olives
Pickles
Pineapple
Condiments:
Hummus and/or Sour Cream
Cheese
Salsa
Guacamole (if avocados not available)
Homemade salad dressing
Ranch Dressing
