Roasted Veggies

Recipe idea! Big pan of roasted veggies. Chop up potatoes, carrots, pumpkin, and other firm squash. Drizzle with lemon juice, olive oil, salt, pepper, dill, mixed herbs, and a little paprika and cayenne for added kick. Bake for 15-20min at 350 degrees. Add softer veggies like mushrooms, peppers, and cauliflower and pop back in the over for another 15-20mins.
